Ingredients
1 cup of raisins
1 cup of apple juice
1 tablespoon of grated lemon zest
4 cups of cooked brown rice
1 cinnamon stick
½ cup of chopped walnuts
Instructions
Add the raisins, lemon zest, cinnamon and apple juice in saucepan
At low heat, simmer for 3 to 5 minutes until the raisins puff up
Add the brown rice and simmer it for another 3 minutes
Turn off the heat, add the walnuts and cover for about 10 minutes
Make sure all liquids are absorbed
